
Today, I’m going to present you one experiment, which surprised me with its taste. I love quinoa, I can eat it every day, this is why I decided to do something about it again. It’s quite a filling salad, and I advise you to have it on its own. Try it; you won’t regret 😉
- 250 g cooked Quinoa
- 1 Radicchio salad (or any lead salad)
- 400g Chickpeas Can
- 3 red peppers
- 1/4 red onion
- 10 g fresh parsley
- 1 beef tomato
- 1 lime
- 1/4 tbsp cumin powder
- 3tbsp olive oil
- salt and black pepper
You can start off with the peppers because they take more time to be prepared. Put the peppers on a baking tray in the oven for 10 min at 250 degrees. Take it from the oven and leave them to cool down completely before taking the skin off. Chop the onion, parsley, and the beef tomato into the desired pieces.
In a salad bowl put the cooked quinoa, the chickpeas and add the parsley, tomatoes, onion and the chopped roasted red peppers. Sprinkle with salt, cumin powder, pepper, olive oil and the lime and give it a good stir. Bon Appetite!
