My Version Tom Yum Soup

This is one of my favourite soups. It is super easy to make as it takes only 10-15 mins (perfect for busy people who don’t have much time to cook but still want to stay healthy). There is only 2 g of fat in a portion (whole soup is 2 portions), 150 kcal, 30 g of protein and only 5 g of carbs, AMAZING, isn’t it?

 Ingredients

  • 1L vegetable stock
  • 4 lemongrass stalks, bruised and cut into large pieces
  • 4 thick slices galangal (if you can’t find a fresh one, buy the one in a jar)
  • 3 coriander roots or 6 stems, bruised, plus leaves to garnish
  • 5 lime leaves
  • 200 g oysters mushrooms
  • 1 piece of chicken breast (optional)
  • 5 small green chillies, chopped
  • 6 tbsp lime juice 

Directions

  1. Bring the stock to a boil in a saucepan. Add the lemongrass, galangal, coriander roots and lime leaves, then simmer for 5 mins.
  2. Add the chicken, mushrooms, chillies and lime juice and return to the boil. Taste and adjust the seasoning with either more lime juice and salt if needed then garnish with extra coriander leaves and serve. Enjoy
