My healthy alternative to OREO, they are so delicious. I don’t feel guilty when looking my child eating them because they are sugar-free, dairy free and gluten free.
For the filling
Prepare cookies by placing the dates, cacao powder, cashew, 2 tbs honey and vanilla in a blender or food processor. Blend until mostly smooth.
On a clean surface (I use a piece of parchment paper) roll mixture, out until it’s about ¼” thick. Use a circular cookie cutter to cut out cookies. Transfer cookies to a plate and place in freezer to set.
Prepare the filling by draining cashews and blending with 2 tbs honey and vanilla until smooth.
Remove cookies from the freezer. Spread icing over cookies to create sandwiches. You may want to set them back in the freezer for 15 minutes to set before enjoying. Store in refrigerator.
