Couscous Salad

  • 50g gluten free couscous
  • 100g cherry tomatoes
  • 1 avocado
  • handful rocket
  • 15g fresh basil
  • 5 olives
  • 1/2 lime
  • 2tbsp olive oil
  • salt and pepper¬†


Tip couscous into a large bowl, pour 100ml hot water. Cover, then leave for 10 mins, until fluffy and all the water has been absorbed. Meanwhile, cut cherry tomatoes, avocado and basil. Add these to the couscous, together with the rocket, olive oil, olives and lime, then sprinkle over salt and pepper and serve.
