Baked Potatoes with olives and Sun dried tomatoes

When I was a little kid, my mum used to make a similar recipe to this one. The only one difference was that she did not use sun dried tomatoes, just because they were not that popular at that time.  The cultivated rocket was not available that days and my mum used the green leaves from a dandelion flower that we had in our garden. They have a similar taste but I think that the dandelion leaves have stronger and bitter taste compared to the rocket we can buy nowadays.  If you want to try this recipe, you can watch the video below.
