Avocado, Smocked Salmon and Baked Egg Teff flour tortilla

This breakfast is wonderfully healthy and filling breakfast. You will get proteins, healthy fats and Omega 3 fatty acids with this meal. Do you know that you don’t absorb the cholesterol from the eggs? This is why the doctors now recommend eating one egg a day because it will give you essential proteins for healthy living.


  • 100g teff flour
  • 5 tbsp water
  • 1 avocado
  • 2 egg
  • 1/2 lemon
  • 20g salmon
  • 1/2 tomato
  • some sunflower seeds
  • Salt and Pepper

Start off with preparing the teff flour tortillas. Make a little dough as you make a pizza dough, roll it out and put it into an oven for five mins at 250 degrees. Take it from the oven and leave it to cool down completely. Make the baked eggs as you put the eggs in an egg ring and bake them in a non-stick pan for five mins, just on one side.

Mash the avocado with the lemon, salt and pepper and spread it all out on the teff tortilla. Place the baked eggs in the centre of the tortillas and add the smoked salmon all around the eggs. On top of the baked eggs slice half tomato and sprinkle with salt and pepper and some sunflower seeds.
